Ive got a line/moment from each book, these arent 100% accurate quotes, but these are the most memorable from each book for me:

TEotW: Weep for Manethren(Moirraine)

TGH: I will never serve you, Father of Lies. In a thousand lives, I never have. I know that. I'm sure of it. Come. It is time to die.

TDR: Come its time to hunt brother(Hopper to Perrin at the end)

TSR: The Maidens carry my honour (Rand before going into Alcair dal)

TFoH: RAAHVIINNNNN

LoC: Kneel to the Lord Dragon or you will be knelt.(Taim)

CoS: What language speak we Hornsounder?

PoD: Come Shaitan
I dont remeber exactly how it went, so I'll edit it in later when I can refer to the books, but I mean the quote when Rand is wielding Callandor in while fighting the Seanchan and goes nuts.

WH: When the Moon turns Green(Rand to Lan when Lan asks him to let him fall of the roof)

CoT: Think on whether keeping my wife is worth it (Perrin to the captured
Shaido after he chops of his hand)

KoD: My husband rides towards Tarwins Gap, towards Tarmon Gaidon will he ride alone?

Cool topic....and about time we got the forum going again!

TEotW: The prologue - Dragonmount - set up the whole series from that point on and gave me goosflesh.
Quote: "But Mat shouted, "Carai an Caldazar! Carai an Ellisande! Al Ellisande!"(For the honour of the red eagle, for the honour of the rose of the sun, the rose of the sun) - p.265"

TGH: Rand and Lord Ingtar in the alley and Ingtar confesses to being a darkfriend and then repents. Ingtar then sacrifices himself to save the Rivers Folk. Awesome scene, full of emotion and frankly I love heroic last stands to save your soul.
Quote: "Moiraine Sedai sent me, Lord Ingtar," Verin announced with a satisfied smile. "She thought you might need me." - p.231 - This is cool because it casts doubt on Verin being bound by the Oath Rod as Moiraine later reveals she never said any such thing.............

TDR: Mat giving Galad and Gawyn a royal ass whupping with his staff. This is where Mat's inherent proficiency with polearm like weapons starts appearing and quite frankly I loved the fact that he took the two pretty boys down a notch.
Quote: A couple:
"Muad'drin tia dar allende caba'drin rhadiem! Los Valdar Cuebiyari! Los! Carai an Caldazar! Al Caldazar!" - Footmen prepare to pass cavalry.
Probably literally "Foot soldiers to ??? ??? horse soldiers ???" "Muad" means "foot", "drin" means "soldier", "tia" means "to" and "caba". means "horse"

"Mia ayende, Aes Sedai! Caballein misain ye! Inde muagdhe Aes Sedai misain ye! Mia Ayende!" - release me, Aes Sedai; "I am a free man Aes Sedai. I am no Aes Sedai meat."
Probably literally "my release/freedom, Aes Sedai". "Mia" means "my" and "ayende" means "release/freedom"

"Any fool knows men and women think differently at times, but the biggest difference is this. Men forget, but never forgive; women forgive, but never forget." - Thomdril Merrilin

TSR: I love the whole book, but Perrin's defense of the Two Rivers is my fave part. The only time I will have Perrin as a fave part.
Quote: "And you loved power!" For a moment he felt dazed. The words sounded true - he knew they were true - but where had they come from? - Rand, to Lanfear, p.183 - Rand's slow decent into madness starts with LTT coming through stronger and stronger

TFoH: Far Snows - hur hur hur....and Mat leading his soldiers (creating the Shen an Calar in the process) against the Shaido.
Quote: "You? No!" The word still hung in the air when death took him. - Asmodean, p.961

LoC: Dumai's Wells.
Quote: "Kneel to the Lord Dragon, or you will be knelt." - Mazrim Taim, after the battle of Dumai's Wells

"Dance with a woman, and she will forgive much; dance well, and she will forgive anything." - Matrim Cauthon

aCoS: Chapter: Mashiara where Nynaeve finally breaks her block and she and Lan get together. (I am such a sentimental fool)
Quote: "What language speak we Hornsounder?" - Birgitte Swovan Night - Awesome scene

tPoD: Narishma becoming the "one that comes after" when he goes to collect Callandor.
Quote: "I killed the whole world, and you can too, if you try hard." - Lews Therin Telamon

WH: Mat kidnapping Tuon.
Quote: Suddenly he knew he did not have to describe Kisman and the others. He could draw them so well that anyone would recognize the faces. Except, he had never been able to draw in his life. Lews Therin could, though. That should have frightened him. It should have. - Rand, p.447

CoT: When the book ended.
Quote: "Fortune rides like the sun on high
with the fox that makes the ravens fly.
Luck his soul, the lightning his eye,
He snatches the moons from out of the sky." - Noal

KoD: Nynaeve marshalling the men of Malkier.
Quote:"'Lan told me once that Malkier lives so long as one man wears the hadori in pledge that he will fight the Shadow, so long as one woman wears the ki'sain in pledge that she will send her sons to fight the shadow. I wear the ki'sain, Master Aldragoran. My husband wears the hadori. So do you. Will Lan Mandragoran ride to the last battle alone?'"
o Nynaeve ti al'Meara Mandragoran

Those are some great scenes and quotes.
Ah, I can't remember specifics, but I remember many of the ones you both listed.
I haven't read the last 3 books so don't know those, but the others are good ones!
