I'm interested in reading them, and was wondering if you all could recommend an edition?

The edition I first read was Eknath Easwaran's; while I recommend it, I have found since that the best policy with translated works is always to use a large academic library so that you may compare every available edition side-by-side and make your own choice thereby. Good luck; the Upanishads can be a very positive and transformative experience if you are receptive to their teachings.
